豆制品生產(chǎn)線中從原料到制成漿液之磨糊，磨糊的目的是破壞大豆組織結(jié)構(gòu)，使大豆蛋白質(zhì)能游離出來溶于水中，磨碎時大豆的粗細(xì)度對蛋白質(zhì)抽提有很大的影響，而磨制中加水量的多少，對大豆粉碎的粗細(xì)度及磨糊稠有直接的關(guān)系，因而磨糊時須控制好豆與水的配比。豆制品機械生產(chǎn)中從原料到制成漿磨豆淋水是用水帶動大豆在磨床內(nèi)起潤滑作用;二是磨子運轉(zhuǎn)時發(fā)生熱量淋水起到冷卻作用，三是可使磨碎物細(xì)膩，同時在磨的作用下使水和大豆蛋白質(zhì)混合成均勻的膠體溶液。
